Ingredients

  • 16 oz. ground turkey
  • 1/2 c. chopped onions
  • 1/2 c. chopped green pepper
  • 2 c. canned tomatoes, chopped
  • 1 envelope taco seasoning mix
  • 2 c. cottage cheese (nonfat or regular)
  • 1 1/2 c. shredded Cheddar cheese
  • 2 eggs, beaten slightly
  • 6 (6-inch) flour or corn tortillas
  • 1 c. chopped tomatoes
  • 2 c. lettuce, shredded

Method

  • Preheat oven to 350°.
  • Brown meat with onion and green pepper. Drain any grease.
  • Add tomatoes, chopped (2 cups) and taco mix. Simmer uncovered for 5 minutes.
  • In bowl, combine cottage cheese, 1 cup shredded Cheddar cheese and eggs.
  • In 8 x 12-inch baking dish, arrange 3 tortillas on bottom of sprayed dish.
  • Spoon meat evenly over tortillas.
  • Top with 3 more tortillas, then cheese mixture. Bake covered at 350° for 40 minutes.
  • Remove cover, check that cheese mix is done.
  • Sprinkle with cheese (1/2 cup left) and bake uncovered 5 more minutes until cheese melts.
  • Remove from oven. Let sit 5 minutes.
  • Top with lettuce and tomatoes and serve.
