Ingredients

  • 1 c. yellow cornmeal
  • 1/3 c. all-purpose flour
  • 2 Tbsp. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 2 eggs
  • 1 c. buttermilk
  • 1/2 c. cooking oil
  • 1 can cream-style corn
  • 1/3 c. chopped onion
  • 2 Tbsp. chopped green pepper
  • 1/2 c. shredded Cheddar cheese

Method

  • In mixing bowl, combine cornmeal, flour, sugar, baking powder and baking soda.
  • Combine remaining ingredients and add to dry mix; stir only until moistened.
  • Pour into a greased 9-inch square pan or 10-inch skillet.
  • Bake at 350° for 30 or 35 minutes or until golden brown.
  • Yields 8 to 10 servings.
