Ingredients
- 1 lb. can cream-style corn
- 1 c. self-rising cornmeal
- 1/2 c. chopped onions
- 1 c. buttermilk
- 1/2 c. oil
- 1/2 c. chopped bell pepper
- 4 to 5 jalapeno peppers, chopped fine
- 2 eggs
- 1 c. Cheddar cheese, grated
- 2 Tbsp. oil
Method
- Mix first 9 ingredients in the order listed.
- Preheat 2 tablespoons oil in heavy iron skillet in 400° oven until very hot. Pour batter into skillet.
- Turn oven to 375° and cook until golden brown.
