Ingredients

  • 1 c. corn meal
  • 1 c. all-purpose flour
  • 1/4 c. sugar
  • 1 tsp. salt
  • 3 Tbsp. baking powder
  • 1 egg
  • 1 c. milk
  • 1 c. cottage cheese
  • 1 1/2 c. cooking oil
  • 8 oz. sharp Cheddar cheese, grated
  • 2 cans green chilies

Method

  • Mix the first five ingredients in a bowl and add egg, milk, cottage cheese and cooking oil.
  • Pour 1/2 of the batter into a well-greased pan.
  • Add grated cheese and green chilies.
  • Add remaining batter.
  • Cook at 400° for 30 to 45 minutes.
  • Good with chili.
