- 1 1/2 c. cornmeal mix
- 1/4 c. flour
- 2 eggs
- 1/4 c. oil
- 1/4 c. melted butter
- 1 can cream-style corn
- 1 onion, chopped fine
- 8 oz. shredded Cheddar cheese
- 3 chopped jalapenos or 1/4 c. pickled jalapenos, chopped
- buttermilk
Method
- In a bowl, mix cornmeal and flour.
- Add all other ingredients except buttermilk; stir well.
- Add enough buttermilk needed for your cornbread batter.
- Pour into greased muffin tins.
- Bake at 400° for 15 to 20 minutes until done and lightly browned.
