Ingredients

  • 1 1/2 c. cornmeal mix
  • 1/4 c. flour
  • 2 eggs
  • 1/4 c. oil
  • 1/4 c. melted butter
  • 1 can cream-style corn
  • 1 onion, chopped fine
  • 8 oz. shredded Cheddar cheese
  • 3 chopped jalapenos or 1/4 c. pickled jalapenos, chopped
  • buttermilk

Method

  • In a bowl, mix cornmeal and flour.
  • Add all other ingredients except buttermilk; stir well.
  • Add enough buttermilk needed for your cornbread batter.
  • Pour into greased muffin tins.
  • Bake at 400° for 15 to 20 minutes until done and lightly browned.
