Ingredients

  • 2 c. self-rising cornmeal
  • 1 c. self-rising flour
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 2/3 c. cooking oil
  • 1/2 c. buttermilk
  • 1/2 c. water
  • 1 large can Mexicorn
  • 1 c. grated cheese
  • 4 eggs
  • 1 large onion, chopped fine
  • 1 bell pepper, chopped
  • 3 or 5 jalapeno peppers, chopped fine

Method

  • In large bowl, combine dry ingredients.
  • Add pepper and onion, mixing well.
  • Add eggs and oil.
  • When well mixed, add corn, milk and water.
  • Stir well.
  • Pour 1/2 of mixture into a large pan or skillet.
  • Add cheese.
  • Pour on rest of bread mixture.
  • Bake at 450° until brown.
  • If desired, leave out jalapeno peppers.
