- 2 c. self-rising cornmeal
- 1 c. self-rising flour
- 1 Tbsp. sugar
- 1 tsp. salt
- 2/3 c. cooking oil
- 1/2 c. buttermilk
- 1/2 c. water
- 1 large can Mexicorn
- 1 c. grated cheese
- 4 eggs
- 1 large onion, chopped fine
- 1 bell pepper, chopped
- 3 or 5 jalapeno peppers, chopped fine
Method
- In large bowl, combine dry ingredients.
- Add pepper and onion, mixing well.
- Add eggs and oil.
- When well mixed, add corn, milk and water.
- Stir well.
- Pour 1/2 of mixture into a large pan or skillet.
- Add cheese.
- Pour on rest of bread mixture.
- Bake at 450° until brown.
- If desired, leave out jalapeno peppers.
