Ingredients

  • 2 c. corn meal mix
  • 1 scant tsp. baking powder
  • 1/4 tsp. soda
  • 3/4 c. buttermilk
  • 3/4 c. sour cream
  • 2 eggs
  • 2 Tbsp. oil
  • 1 small can whole kernel corn
  • 1 small can chopped green chilies
  • 1/2 c. chopped onion
  • 1/2 to 3/4 c. grated Cheddar cheese

Method

  • Mix dry ingredients.
  • Add butter, milk, sour cream, eggs and oil.
  • Add whole kernel corn, green chilies, onion and Cheddar cheese and enough oil to cover bottom of skillet or pan.
  • (I use cast-iron skillet.)
  • If batter is too thick, add more milk.
  • Bake at 375° to 400° until brown, as desired.
