Ingredients

  • 2 lbs. cubed round steak
  • 2 tbsp. salad oil
  • 1 onion, sliced
  • 1 clove garlic, mashed
  • 1 (1 lb.) can tomatoes
  • 1 c. water
  • 1 teaspoon salt
  • 1-2 teaspoon chili pwdr
  • 1 teaspoon oregano
  • Dash cayenne pepper
  • 1/2 teaspoon cumin
  • 2 (15 ounce.) cans kidney beans or possibly Mexican style chili beans

Method

  • In Dutch oven brown meat in warm oil.
  • Add in all ingredients except beans.
  • Cover, bring to a boil; reduce heat and simmer for 1 hour.
  • Stir occasionally.
  • Add in more liquid as needed.
  • Skim off fat; add in beans and simmer 30 min more.
  • Makes 6 servings.
