Ingredients
- 1 gal. large cucumbers
- 1 c. pickling lime
- 1 c. vinegar
- 1 1/2 bottles red food coloring
- 2 Tbsp. alum
- enough water to cover
- 2 1/2 c. vinegar
- 2 1/2 c. water
- 10 c. sugar
- 8 pieces stick cinnamon
- 1 large pack Brock's cinnamon discs
Method
- Peel and core cucumbers.
- Cut into chunks or rings.
- Cover with water to which pickling lime has been added.
- Let set 24 hours.
- Drain and rinse well.
- Put in ice water to cover.
- Let set 2 hours.
