Ingredients

  • 1 Cup chopped onion
  • 1/4 Cup butter
  • 1 Can mushroom soup
  • 1 Can cream of chicken soup
  • 1 Can (10 ounce) tomatoes and chilies (Rotel)
  • 1 Tablespoon chili powder
  • 1 Cup broth (chicken or beef)
  • 1 Package (8 ounce) tortillas
  • 3 Cups ground, cooked soybeans 10 Ounces cheddar cheese
  • 1 Clove garlic, minced

Method

  • Saute onion and garlic in butter. Add soups, tomato sauce and soybeans. Soak tortillas in broth 10 minutes. Line greased casserole dish with half the tortillas, bean mixture and cheese. Repeat for a total of 2 layers. Bake 30 minutes at 350° F or until the casserole is bubbly.
