Ingredients

  • 1 lb. ground beef
  • 1 small green pepper, cut into strips
  • 1 onion, chopped
  • 1 (12 oz.) jar medium salsa
  • 1 (8 oz.) can tomato sauce
  • 1 chicken bouillon cube
  • 1 1/2 c. Minute rice
  • shredded lettuce
  • tomato wedges
  • sour cream
  • shredded cheese
  • pitted olives
  • tortilla chips

Method

  • Brown beef, pepper and onion.
  • Drain.
  • Add salsa, tomato sauce and bouillon cube.
  • Bring to a full boil.
  • Stir in rice; cover. Remove from heat.
  • Let stand 5 minutes.
  • Fluff with fork.
  • Serve with lettuce, tomatoes, sour cream, cheese, olives and chips.
