Ingredients

  • 2 (14 1/2 oz.) cans tamales (Old El Paso)
  • 1 (20 oz.) can yellow hominy, drained
  • 1 can Vienna sausages, drained and cut into thirds
  • 1 (10 1/2 oz.) can condensed cream of chicken soup
  • 1/4 c. shredded sharp Cheddar cheese
  • 2 Tbsp. chopped chili peppers (if desired)

Method

  • Remove wrappers from 1 can of tamales.
  • Cut tamales in thirds. Combine the cut tamales, hominy, sausage and soup.
  • Turn into 1 1/2-quart casserole.
  • Bake uncovered in 350° oven 30 or 40 minutes.
  • Remove wrappers from second can of tamales.
  • Cut tamales diagonally in halves.
  • Garnish top of casserole with cut tamales. Sprinkle with cheese atop.
  • Return to oven to melt cheese and heat top of tamales.
