Ingredients
- 2 (14 1/2 oz.) cans tamales (Old El Paso)
- 1 (20 oz.) can yellow hominy, drained
- 1 can Vienna sausages, drained and cut into thirds
- 1 (10 1/2 oz.) can condensed cream of chicken soup
- 1/4 c. shredded sharp Cheddar cheese
- 2 Tbsp. chopped chili peppers (if desired)
Method
- Remove wrappers from 1 can of tamales.
- Cut tamales in thirds. Combine the cut tamales, hominy, sausage and soup.
- Turn into 1 1/2-quart casserole.
- Bake uncovered in 350° oven 30 or 40 minutes.
- Remove wrappers from second can of tamales.
- Cut tamales diagonally in halves.
- Garnish top of casserole with cut tamales. Sprinkle with cheese atop.
- Return to oven to melt cheese and heat top of tamales.
