Ingredients

  • 1 lb. smoked sausage, sliced
  • 1 onion, chopped
  • pimento or red bell pepper
  • 4 cans cream-style corn
  • 1 c. milk
  • salt and pepper to taste
  • 1/2 green pepper, chopped
  • 1 can whole kernel corn, drained
  • 1/4 lb. saltine crackers

Method

  • Brown sliced sausage in large pan.
  • Add onion and bell peppers. Saute until tender.
  • Add corn, milk and crushed saltines to thicken.
  • You can cook this on top the stove, scraping and stirring occasionally for 1 hour.
  • Or bake in the oven at 325°.
  • If you use pimentos instead of red bell peppers, stir them in during the last 1/2 hour of cooking time.
  • Freezes well.
