Ingredients
- 1 lb. smoked sausage, sliced
- 1 onion, chopped
- pimento or red bell pepper
- 4 cans cream-style corn
- 1 c. milk
- salt and pepper to taste
- 1/2 green pepper, chopped
- 1 can whole kernel corn, drained
- 1/4 lb. saltine crackers
Method
- Brown sliced sausage in large pan.
- Add onion and bell peppers. Saute until tender.
- Add corn, milk and crushed saltines to thicken.
- You can cook this on top the stove, scraping and stirring occasionally for 1 hour.
- Or bake in the oven at 325°.
- If you use pimentos instead of red bell peppers, stir them in during the last 1/2 hour of cooking time.
- Freezes well.
