Ingredients

  • 1/4 cup Kraft Extra Virgin Olive Oil Italian Sun-Dried Tomato Dressing
  • 3 cloves garlic, minced
  • 1 small onion, diced King Sooper's 1 lb For $0.99 thru 02/09
  • 1 zucchini, cut into 1/4-inch rounds
  • 1 red pepper, cut into 1/2-inch chunks
  • 1 can (19 fl oz/540 mL) white kidney beans, drained, rinsed
  • 1 can (28 fl oz/796 mL) diced tomatoes, drained
  • 1 cup Cracker Barrel Crumbled Feta Cheese with Oregano, Sun Dried Tomatoes and Black Pepper

Method

  • Heat oven to 400 degrees F.
  • Heat dressing in a medium skillet over medium-high heat.
  • Add garlic and onions; cook 2 min.
  • Add zucchini and pepper; cook and stir 7 min.
  • until crisp-tender.
  • Add beans and tomatoes; cook an additional 3 min.
  • Spoon into a 1.5-L baking dish and sprinkle with cheese.
  • Bake 10 min.
  • or until heated through.
