Ingredients
- 1/4 cup Kraft Extra Virgin Olive Oil Italian Sun-Dried Tomato Dressing
- 3 cloves garlic, minced
- 1 small onion, diced King Sooper's 1 lb For $0.99 thru 02/09
- 1 zucchini, cut into 1/4-inch rounds
- 1 red pepper, cut into 1/2-inch chunks
- 1 can (19 fl oz/540 mL) white kidney beans, drained, rinsed
- 1 can (28 fl oz/796 mL) diced tomatoes, drained
- 1 cup Cracker Barrel Crumbled Feta Cheese with Oregano, Sun Dried Tomatoes and Black Pepper
Method
- Heat oven to 400 degrees F.
- Heat dressing in a medium skillet over medium-high heat.
- Add garlic and onions; cook 2 min.
- Add zucchini and pepper; cook and stir 7 min.
- until crisp-tender.
- Add beans and tomatoes; cook an additional 3 min.
- Spoon into a 1.5-L baking dish and sprinkle with cheese.
- Bake 10 min.
