- 3 tablespoons fresh lemon juice

- 3/4 teaspoon sugar
- 1/2 teaspoon kosher salt
- Freshly ground black pepper
- 2 pints grape tomatoes, halved
- 1 large shallot, minced
- 2 teaspoons chopped fresh thyme
Method
- In a large bowl, whisk together lemon juice, olive oil, sugar, salt, and a generous grind of black pepper. Add tomatoes, minced shallot, and thyme; toss well. Transfer to a sealable container.
