Ingredients
- 4 small zucchini, sliced
- 1 medium onion, sliced
- 1 tsp. minced garlic
- 1 1/2 tbsp. olive oil
- 1/2 c. sharp cheddar, grated
- 1/2 c. Monterey Jack, grated
- 1 1/2 c. white corn (fresh, frozen, or canned)
- 1/2 c. canned mild green chilies, diced
Method
- Saute the zucchini, onion, and garlic in the oil until just soft.
- Mix together all ingredients and put in an oiled casserole dish.
- Bake in a pre-heated 375 degree oven.
- Cook for 20-25 minutes or until top begins to brown.
- Serves 4-6.
