Ingredients

  • 4 sardines fresh
  • kosher salt
  • extra-virgin olive oil
  • 1 lime
  • 1 peach
  • 1/2 avocado
  • salt

Method

  • For the sardines, use a sharp knife to remove loins, being careful to leave them whole.
  • Remove the biggest bones and cover with kosher salt for at least 4 hours.
  • Discard salt and remove skin.
  • Cover sardines with olive oil and lime zest and marinate for at least 24 hours.
  • Peel peach and avocado, halve, remove pits and cut into small cubes.
  • Season with lime juice and a little salt to taste.
  • To serve, place peach and avocado in a dish and top with sardines.
  • Garnish with lime zest and serve immediately.
