Ingredients
- 4 sardines fresh
- kosher salt
- extra-virgin olive oil
- 1 lime
- 1 peach
- 1/2 avocado
- salt
Method
- For the sardines, use a sharp knife to remove loins, being careful to leave them whole.
- Remove the biggest bones and cover with kosher salt for at least 4 hours.
- Discard salt and remove skin.
- Cover sardines with olive oil and lime zest and marinate for at least 24 hours.
- Peel peach and avocado, halve, remove pits and cut into small cubes.
- Season with lime juice and a little salt to taste.
- To serve, place peach and avocado in a dish and top with sardines.
- Garnish with lime zest and serve immediately.
