Ingredients

  • 2 large pork tenderloins (about 1 3/4 lbs each)
  • 3-4 tbsp vegetable oil
  • 2/3 cup teriyaki sauce
  • 2 None limes, peel grated and limes juiced
  • 1 slice (1/2-inch) ginger, peeled and finely grated
  • 2 None red chili peppers, seeded and thinly sliced, plus additional, for garnish
  • 1/4 cup olive oil
  • 1 bunch green onions, trimmed and sliced

Method

  • Preheat the oven to 400°F. Heat the vegetable oil in a large skillet on high heat. Cook pork until seared on all sides. Season. Place on a foil-lined baking pan. Bake for 15-20 mins. Remove pork from the oven. Let stand, loosely covered with foil, for 20 mins.
  • Meanwhile, whisk the teriyaki sauce, lime peel and juice, ginger and chili peppers in a large bowl. Season then whisk in the olive oil. Cut pork into thin slices and add to the marinade.
  • Serve pork garnished with green onions and additional chili peppers. Serve with crusty baguettes.
