Ingredients

  • 3 cracked crabs
  • 1/2 c. oil
  • 1/4 c. wine vinegar
  • 1/3 c. finely minced parsley
  • 1 tbsp. chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Garlic to taste

Method

  • Put cracked crab in a large bowl.
  • Combine all remaining ingredients in a small bowl and blend well.
  • Pour this mix over the crab and toss together till the marmalade is well absorbed.
  • This can be served right away but is better refrigerated for a few hrs or possibly overnight.
  • The Marinated Crab can be served as an appetizer or possibly a hot summer evening dinner.
