Ingredients
- 5 c. carrots, cut to desired size (2 lb.)
- 1 tsp. prepared mustard
- 3/4 c. sugar
- 1 can tomato soup
- 1 c. chopped peppers
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/2 c. oil
- 3/4 c. vinegar
- 1 c. chopped onion
Method
- Boil carrots for 5 minutes; drain and cool.
- In medium bowl, put salt, pepper and mustard.
- Beat in a little of the oil to blend with mustard.
- Add the remainder of the oil, sugar, vinegar and soup.
- Beat until mixed.
- Add onion, peppers and carrots. Cover tightly and chill.
