Ingredients
- 2 lb. fresh carrots
- 1 onion, sliced thin
- 1/2 bell pepper, chopped
- 1 can tomato soup
- 1/2 c. cooking oil
- 1/2 c. vinegar
- 1/2 c. sugar
Method
- Slice carrots in rounds and boil in salted water for 10 minutes or until tender; drain.
- Put soup, oil, vinegar and sugar in saucepan and bring to a boil.
- Layer carrots, onions and peppers in baking dish.
- Pour hot soup mixture over them.
- Cool and refrigerate.
