Ingredients

  • 2 beets candy cane
  • 3 tablespoons olive oil
  • 1 1/2 tablespoons white vinegar
  • 1 teaspoon sugar fine
  • 2/3 cup feta cheese
  • 3 1/4 tablespoons unsalted pistachios

Method

  • Peel the beets, rinse.
  • With a mandolin slice thinly.
  • In a bowl, mix olive oil, white vinegar, and sugar to make a marinade.
  • Add beet slices making sure that they do not stick together, coating well with marinade. Refrigerate overnight.
  • The next day arrange beet slices on the plate, top with crumbled feta and crushed pistachios.
