Ingredients
- 2 beets candy cane
- 3 tablespoons olive oil
- 1 1/2 tablespoons white vinegar
- 1 teaspoon sugar fine
- 2/3 cup feta cheese
- 3 1/4 tablespoons unsalted pistachios
Method
- Peel the beets, rinse.
- With a mandolin slice thinly.
- In a bowl, mix olive oil, white vinegar, and sugar to make a marinade.
- Add beet slices making sure that they do not stick together, coating well with marinade. Refrigerate overnight.
- The next day arrange beet slices on the plate, top with crumbled feta and crushed pistachios.
