Ingredients
- 1 each: large green, yellow and red bell pepper (1/2-inch strips)
- 1 large onion, cut in 1/2-inch strips
- 3 Tbsp. olive oil
- 1/4 c. white wine vinegar
- 2 Tbsp. dried basil
- salt and white pepper to taste
- 1 Tbsp. sugar
Method
- Heat oil in skillet over medium heat and add onion and pepper strips.
- Cover and cook until peppers are slightly softened. Place in bowl and add vinegar, sugar, salt and pepper.
- Can be prepared 1 day ahead.
- Cover and refrigerate.
