Ingredients

  • 3 Tbsp. oil
  • 1 small onion, minced
  • 1 small green pepper, diced
  • 1 c. rice
  • 1 (14 oz.) can beef broth
  • 1 c. diced, cooked ham
  • 1 (8 oz.) can pineapple chunks, drained
  • soy sauce

Method

  • Heat oil in skillet; add onion, green pepper and rice and saute over medium heat until golden, stirring constantly.
  • Stir in broth and bring to a boil.
  • Reduced heat, cover and simmer for 15 minutes or until rice is tender and liquid is almost absorbed.
  • Fold in ham and pineapple; simmer 5 more minutes.
  • Serve with soy sauce.
  • Makes 4 servings.
