Ingredients
- 3 Tbsp. oil
- 1 small onion, minced
- 1 small green pepper, diced
- 1 c. rice
- 1 (14 oz.) can beef broth
- 1 c. diced, cooked ham
- 1 (8 oz.) can pineapple chunks, drained
- soy sauce
Method
- Heat oil in skillet; add onion, green pepper and rice and saute over medium heat until golden, stirring constantly.
- Stir in broth and bring to a boil.
- Reduced heat, cover and simmer for 15 minutes or until rice is tender and liquid is almost absorbed.
- Fold in ham and pineapple; simmer 5 more minutes.
- Serve with soy sauce.
- Makes 4 servings.
