- 1 small orange (about 6 oz.)
- 1/2 lb. beef cubes
- 8 medium mushrooms
- 8 medium scallions, cut into 2-inch pieces
- 1/2 c. orange juice (no sugar added)
- 1 Tbsp. each: teriyaki sauce and dry sherry
- 1 tsp. Dijon style mustard
- 2 garlic cloves, minced
- 1 tsp. honey
- dash of pepper
- 1 tsp. cornstarch
Method
- Using small holes of hand grater, grate orange peel.
- Cut orange into quarters.
- In medium glass or stainless steel mixing bowl, combine orange quarters, orange peel, beef, mushrooms and scallions.
- In a 1-cup liquid measure, combine remaining ingredients, except cornstarch.
- Add to beef mixture; toss to coat.
- Cover; refrigerate at least 3 hours or overnight.
