Ingredients

  • 1 small orange (about 6 oz.)
  • 1/2 lb. beef cubes
  • 8 medium mushrooms
  • 8 medium scallions, cut into 2-inch pieces
  • 1/2 c. orange juice (no sugar added)
  • 1 Tbsp. each: teriyaki sauce and dry sherry
  • 1 tsp. Dijon style mustard
  • 2 garlic cloves, minced
  • 1 tsp. honey
  • dash of pepper
  • 1 tsp. cornstarch

Method

  • Using small holes of hand grater, grate orange peel.
  • Cut orange into quarters.
  • In medium glass or stainless steel mixing bowl, combine orange quarters, orange peel, beef, mushrooms and scallions.
  • In a 1-cup liquid measure, combine remaining ingredients, except cornstarch.
  • Add to beef mixture; toss to coat.
  • Cover; refrigerate at least 3 hours or overnight.
