Ingredients
- 3 chicken breasts, skin removed
- 2 Tbsp. margarine
- 1 green bell pepper, cut into strips
- 1 medium onion, sliced
- 1 medium can crushed pineapple (approximately 10 oz.)
- 1 Tbsp. cornstarch
Method
- Brown chicken breasts in margarine.
- After turning chicken to brown second side, cover pan with lid and cook chicken on low for 20 minutes.
- Remove chicken.
- Add green pepper and onion to pan drippings and saute.
- Add cornstarch and pineapple with juice. Add chicken, which has been cubed, and continue cooking 5 minutes. Serve over chow mein noodles.
- Add soy sauce to taste.
- Yields 3 servings.
