Ingredients

  • 3 chicken breasts, skin removed
  • 2 Tbsp. margarine
  • 1 green bell pepper, cut into strips
  • 1 medium onion, sliced
  • 1 medium can crushed pineapple (approximately 10 oz.)
  • 1 Tbsp. cornstarch

Method

  • Brown chicken breasts in margarine.
  • After turning chicken to brown second side, cover pan with lid and cook chicken on low for 20 minutes.
  • Remove chicken.
  • Add green pepper and onion to pan drippings and saute.
  • Add cornstarch and pineapple with juice. Add chicken, which has been cubed, and continue cooking 5 minutes. Serve over chow mein noodles.
  • Add soy sauce to taste.
  • Yields 3 servings.
