Ingredients
- 24 ounces, weight Frozen Corn
- 4 Tablespoons Butter
- 4 slices Cooked Bacon
- 1/2 cups Onion, Finely Diced
- 1/2 whole Green Pepper, Finely Diced
- 2 whole Jalapenos Diced
- 1/8 cups Garlic, Minced
- 1 can (12 Oz. Can) Diced Tomatoes
- 1/2 cups Green Onions, diced
- 1/2 Tablespoons Thyme
- 1 teaspoon Kosher Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Cayenne
Method
- Melt the butter in a sauce pan. Cook bacon separately and allow to cool. Add corn, onions, peppers, and salt to the melted butter. Reduce the heat to medium.
- Cook, stirring often, for about 15 minutes or until the vegetables are tender.
- Add garlic, tomatoes, green onions, thyme, salt, pepper, and cayenne to your taste.
- Cook for another 15 minutes, stirring occasionally.
