Ingredients

  • 24 ounces, weight Frozen Corn
  • 4 Tablespoons Butter
  • 4 slices Cooked Bacon
  • 1/2 cups Onion, Finely Diced
  • 1/2 whole Green Pepper, Finely Diced
  • 2 whole Jalapenos Diced
  • 1/8 cups Garlic, Minced
  • 1 can (12 Oz. Can) Diced Tomatoes
  • 1/2 cups Green Onions, diced
  • 1/2 Tablespoons Thyme
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Cayenne

Method

  • Melt the butter in a sauce pan. Cook bacon separately and allow to cool. Add corn, onions, peppers, and salt to the melted butter. Reduce the heat to medium.
  • Cook, stirring often, for about 15 minutes or until the vegetables are tender.
  • Add garlic, tomatoes, green onions, thyme, salt, pepper, and cayenne to your taste.
  • Cook for another 15 minutes, stirring occasionally.
