Ingredients

  • 3 Tbs. maple syrup, divided
  • 3/4 tsp. ancho chile powder, divided
  • 8 slices refrigerated vegetarian bacon (6 oz.)
  • 1 cup reduced fat (2%) Greek yogurt
  • 1 Tbs. chopped chives
  • 1/4 tsp. cayenne pepper
  • 18 tsp. salt

Method

  • Combine 1 Tbs.
  • maple syrup with 1/2 tsp.
  • ancho chile powder in cup.
  • Heat nonstick skillet sprayed with cooking spray over medium-high heat.
  • Add bacon, brush with half of maple syrup mixture, and cook 1 minute.
  • Flip, brush with remaining maple syrup mixture, and cook 2 minutes more, or until heated through.
  • Cut into bite-size pieces, combine with yogurt, remaining 2 Tbs.
