Ingredients

  • 3 lb potatoes (new or cubed to 1 1/2 inches)
  • 1/2 cup butter, melted (or olive oil)
  • salt/pepper
  • 6 T balsamic vinegar
  • 4 T maple syrup (pure is best)
  • 5 cloves garlic, minced
  • 1 bunch green onions, chopped
  • 4 T fresh thyme
  • finely shredded lemon peel of 1 lemon

Method

  • Heat oven to 325
  • Toss potatoes with melted butter; sprinkle w/salt & pepper
  • Roast on baking sheet in single layer for 40 minutes, stirring occasionally.
  • Mix vinegar, syrup, and garlic and pour over potatoes, roasting 10-20 minutes more. Spoon glaze over potatoes once or twice.
  • When potatoes are crisp and cooked, remove from oven
  • Sprinkle with green onions, thyme and lemon zest and serve
