Ingredients
- 3 lb potatoes (new or cubed to 1 1/2 inches)
- 1/2 cup butter, melted (or olive oil)
- salt/pepper
- 6 T balsamic vinegar
- 4 T maple syrup (pure is best)
- 5 cloves garlic, minced
- 1 bunch green onions, chopped
- 4 T fresh thyme
- finely shredded lemon peel of 1 lemon
Method
- Heat oven to 325
- Toss potatoes with melted butter; sprinkle w/salt & pepper
- Roast on baking sheet in single layer for 40 minutes, stirring occasionally.
- Mix vinegar, syrup, and garlic and pour over potatoes, roasting 10-20 minutes more. Spoon glaze over potatoes once or twice.
- When potatoes are crisp and cooked, remove from oven
- Sprinkle with green onions, thyme and lemon zest and serve
