- 1 1/2 c. sugar
- 1 1/2 c. white vinegar
- 1 large onion, chopped
- 1 green pepper, chopped
- 1 clove garlic, mashed
- 1 lime, thinly sliced
- 1 1/2 tsp. cinnamon
- 1/2 tsp. cloves
- 1/2 tsp. allspice
- 1 tsp. salt
- 1/4 tsp. cayenne pepper
- 1/2 c. raisins
- 5 large mangoes, peeled and chopped (6 c.)
Method
- Combine all ingredients, except mangoes.
- Bring to a boil. Reduce heat.
- Simmer 1 hour or until thick.
- Watch and stir frequently.
- Add mangoes.
- Simmer 30 minutes more.
- Can or store in refrigerator.
- Delicious on chicken and rice or turkey and dressing.
