Ingredients

  • 1 1/2 c. sugar
  • 1 1/2 c. white vinegar
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 1 clove garlic, mashed
  • 1 lime, thinly sliced
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1/2 tsp. allspice
  • 1 tsp. salt
  • 1/4 tsp. cayenne pepper
  • 1/2 c. raisins
  • 5 large mangoes, peeled and chopped (6 c.)

Method

  • Combine all ingredients, except mangoes.
  • Bring to a boil. Reduce heat.
  • Simmer 1 hour or until thick.
  • Watch and stir frequently.
  • Add mangoes.
  • Simmer 30 minutes more.
  • Can or store in refrigerator.
  • Delicious on chicken and rice or turkey and dressing.
