Ingredients
- 3/4 cup rice short grain, dessert rice
- 4 1/4 cups coconut milk
- 2/3 cup powdered sugar
- 1 mango ripe
Method
- Boil a pot of water and pour in the rice. Boil for 5 minutes.
- Drain the rice. Boil the coconut milk and pour in rice. Add sugar. Stir gently and cook on low heat for 30 minutes.
- Place the diced mango in the bottom of glasses or cups. Add the cooled rice over the mango. Cool for just 1 hour, no longer because the rice will harden. If a creamier dessert is desired, use less rice (about 120 grams).
