Ingredients

  • 4 chicken breasts, skinned and boneless, sliced in 1/2-inch strips*
  • 4 garlic cloves, chopped
  • 4 bacon slices, fried and chopped
  • 4 oz. bamboo shoots
  • 8 oz. mushrooms, sliced
  • 2 oz. Pernod wine
  • 4 oz. peanut oil or sesame oil
  • 4 oz. sugar
  • 4 oz. chicken broth
  • 3 Tbsp. cornstarch, diluted with 1/4 c. water

Method

  • Heat oil and saute chicken strips with garlic for 5 minutes. Add all other ingredients, except cornstarch.
  • Bring to a boil and add cornstarch to thicken.
  • Salt and pepper to taste.
  • Serve over a bed of yellow rice.
