Ingredients

  • 2 cups monterey jack cheese (shredded)
  • 1 cup cheddar cheese (shredded)
  • 1 onion (chopped)
  • 1/2 cup sour cream
  • 2 Tbsp. fresh parsley (optional)
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 15 oz. tomato sauce
  • 2/3 cup water
  • 1/3 cup green peppers (chopped)
  • 1 Tbsp. chili powder
  • 1/2 tsp. oregano
  • 1/4 tsp. ground cumin
  • 1 garlic clove (minced)
  • 8 flour tortillas
  • 1/4 cup cheddar cheese (shredded)

Method

  • Mix monterey cheese, 1 cup cheddar cheese, onion, sour cream, parsley, salt and pepper.
  • Set aside.
