Ingredients

  • BLUEBERRY MEATBALLS
  • 1 1/2 pounds ground turkey
  • 1/4 cup chopped red onion
  • 1/2 cup pureed blueberries
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon groud cumin
  • 1/4 cup cabernet sauvignon
  • 1/2 cup italian seasoned bread crumbs
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • CARAMELIZED BLUEBERRY ONIONS
  • 2 large onions
  • 2 tablespoons butter
  • 1 tablespoon vegetable oil
  • 2-tablespoons light brown sugar
  • 1/2 cup blueberries
  • TOPPING
  • 12 oz. bleu cheese, crumbled

Method

  • To make the meatballs,
  • combine ground turkey, onion, blueberries, nutmeg, cinnamon, cumin, wine, bread crumbs, egg, salt and pepper. Mix well without overmixing. With a small scoop, make meatballs and roll into uniform spheres. Place in baking dish and bake for 20-30 minutes until
  • done. (Cut open meatball to make sure there's no pink in middle.)
  • To make caramelized onions, combine onion, butter, oil, brown sugar and blueberries in a 10-inch non-stick skillet. Cook mixture for 15-20 minutes, stirring until most of the liquid is evaporated. Remove from heat.
  • Drain meatballs, top with caramelized onions and bleu cheese and serve immediately.
