- BLUEBERRY MEATBALLS
- 1 1/2 pounds ground turkey
- 1/4 cup chopped red onion
- 1/2 cup pureed blueberries
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon groud cumin
- 1/4 cup cabernet sauvignon
- 1/2 cup italian seasoned bread crumbs
- 2 eggs
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- CARAMELIZED BLUEBERRY ONIONS
- 2 large onions
- 2 tablespoons butter
- 1 tablespoon vegetable oil
- 2-tablespoons light brown sugar
- 1/2 cup blueberries
- TOPPING
- 12 oz. bleu cheese, crumbled
Method
- To make the meatballs,
- combine ground turkey, onion, blueberries, nutmeg, cinnamon, cumin, wine, bread crumbs, egg, salt and pepper. Mix well without overmixing. With a small scoop, make meatballs and roll into uniform spheres. Place in baking dish and bake for 20-30 minutes until
- done. (Cut open meatball to make sure there's no pink in middle.)
- To make caramelized onions, combine onion, butter, oil, brown sugar and blueberries in a 10-inch non-stick skillet. Cook mixture for 15-20 minutes, stirring until most of the liquid is evaporated. Remove from heat.
- Drain meatballs, top with caramelized onions and bleu cheese and serve immediately.
