Ingredients

  • 2 c. uncooked macaroni
  • 2 egg whites, slightly beaten
  • 1 c. skim milk
  • 3 c. low-fat cottage cheese, pureed in blender
  • 1 c. shredded extra sharp Cheddar cheese
  • 1/8 tsp. salt
  • 1/2 tsp. white pepper
  • 1 Tbsp. chopped fresh parsley
  • vegetable cooking spray
  • 2 Tbsp. bread crumbs
  • 2 tsp. grated Parmesan cheese
  • 1/2 tsp. paprika

Method

  • Preheat oven to 350°. Cook macaroni according to package directions, omitting salt and leaving slightly undercooked; drain. Combine egg whites, skim milk, cottage cheese, Cheddar cheese, salt, white pepper and parsley and blend well. Mix sauce with macaroni and spoon into 1-quart baking dish sprayed with vegetable cooking spray.
