- 2 c. uncooked macaroni
- 2 egg whites, slightly beaten
- 1 c. skim milk
- 3 c. low-fat cottage cheese, pureed in blender
- 1 c. shredded extra sharp Cheddar cheese
- 1/8 tsp. salt
- 1/2 tsp. white pepper
- 1 Tbsp. chopped fresh parsley
- vegetable cooking spray
- 2 Tbsp. bread crumbs
- 2 tsp. grated Parmesan cheese
- 1/2 tsp. paprika
Method
- Preheat oven to 350°. Cook macaroni according to package directions, omitting salt and leaving slightly undercooked; drain. Combine egg whites, skim milk, cottage cheese, Cheddar cheese, salt, white pepper and parsley and blend well. Mix sauce with macaroni and spoon into 1-quart baking dish sprayed with vegetable cooking spray.
