Ingredients

  • 1 (28 ounce) can Italian plum tomatoes
  • 1 -2 jalapeno pepper, chopped
  • 1 -2 garlic clove, chopped
  • 1 medium onion, chopped
  • 14 bunch coriander, chopped
  • 1 -2 tablespoon white wine vinegar
  • salt
  • pepper
  • 1 pinch sugar

Method

  • Carefully chop the tomatoes in your food processor but only to the stage where they are chopped and not pureed.
  • Add a little oil to a frying pan and cook the tomatoes until most of the water has evaporated.
  • Remove from the heat and add the rest of the ingredients, mixing them in well and seasoning the mixture to taste.
  • Let the mixture come to room temperature before serving with taco chips.
