Ingredients
- 1 (28 ounce) can Italian plum tomatoes
- 1 -2 jalapeno pepper, chopped
- 1 -2 garlic clove, chopped
- 1 medium onion, chopped
- 14 bunch coriander, chopped
- 1 -2 tablespoon white wine vinegar
- salt
- pepper
- 1 pinch sugar
Method
- Carefully chop the tomatoes in your food processor but only to the stage where they are chopped and not pureed.
- Add a little oil to a frying pan and cook the tomatoes until most of the water has evaporated.
- Remove from the heat and add the rest of the ingredients, mixing them in well and seasoning the mixture to taste.
- Let the mixture come to room temperature before serving with taco chips.
