Ingredients

  • 2 c. oat bran
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/4 tsp. allspice
  • 5 oz. all fruit preserves
  • 3/4 c. raisins (optional)
  • 1/3 c. unbleached flour
  • 1/2 tsp. salt
  • 1/4 tsp. baking powder
  • 1 1/4 c. skim milk
  • 2 egg whites, lightly beaten

Method

  • Combine oat bran, flour, baking soda, salt, cinnamon, baking powder and allspice.
  • In a small bowl, whisk together milk, preserves and egg whites.
  • Pour liquid ingredients over the flour mixture.
  • Stir to moisten.
  • Fold in raisins.
  • Line 14 cups with liners.
  • Fill with batter.
  • Bake at 350° for 22 minutes or until brown and firm.
