Ingredients
- 2 c. oat bran
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/4 tsp. allspice
- 5 oz. all fruit preserves
- 3/4 c. raisins (optional)
- 1/3 c. unbleached flour
- 1/2 tsp. salt
- 1/4 tsp. baking powder
- 1 1/4 c. skim milk
- 2 egg whites, lightly beaten
Method
- Combine oat bran, flour, baking soda, salt, cinnamon, baking powder and allspice.
- In a small bowl, whisk together milk, preserves and egg whites.
- Pour liquid ingredients over the flour mixture.
- Stir to moisten.
- Fold in raisins.
- Line 14 cups with liners.
- Fill with batter.
- Bake at 350° for 22 minutes or until brown and firm.
