Ingredients
- 4 c. peeled, cubed baking potatoes
- 1/2 c. skim milk
- 1/2 c. plain nonfat yogurt
- 4 cloves garlic, minced
- 1/2 tsp. salt
- 2 Tbsp. minced fresh chives
Method
- Cook potatoes in boiling water to cover 30 minutes or until tender.
- Drain potatoes and mash.
- Add milk, yogurt, garlic and salt.
- Beat at medium speed of an electric mixer until mixture is smooth.
- Stir in chives.
- Yield: 8 servings (fat 0.1 g per 1/2 cup serving).
