Ingredients

  • large hen or 2 fryers
  • 1/2 stick butter
  • 1/2 c. celery
  • 1 medium onion
  • 1/2 green pepper
  • 8 oz. spaghetti
  • small jar pimentos, drained
  • 1/2 lb. grated Cheddar
  • 2 Tbsp. jalapeno sauce or relish (optional)
  • 4 oz. can sliced mushrooms, drained
  • 1 can cream of mushroom soup
  • 1 to 2 cans chicken broth

Method

  • Boil chicken in seasoned water until done.
  • Debone and cut into bite size pieces.
  • Saute onion, celery and green pepper in butter. Cook spaghetti in chicken broth.
  • Add pimentos, cheese, jalapeno sauce, mushrooms, mushroom soup and chicken broth as needed.
  • Pour in baking dish and top with Parmesan cheese.
  • Bake at 350° until bubbly, about 35 to 50 minutes.
