- large hen or 2 fryers
- 1/2 stick butter
- 1/2 c. celery
- 1 medium onion
- 1/2 green pepper
- 8 oz. spaghetti
- small jar pimentos, drained
- 1/2 lb. grated Cheddar
- 2 Tbsp. jalapeno sauce or relish (optional)
- 4 oz. can sliced mushrooms, drained
- 1 can cream of mushroom soup
- 1 to 2 cans chicken broth
Method
- Boil chicken in seasoned water until done.
- Debone and cut into bite size pieces.
- Saute onion, celery and green pepper in butter. Cook spaghetti in chicken broth.
- Add pimentos, cheese, jalapeno sauce, mushrooms, mushroom soup and chicken broth as needed.
- Pour in baking dish and top with Parmesan cheese.
- Bake at 350° until bubbly, about 35 to 50 minutes.
