Ingredients
- 2 c. Idaho potatoes, baked
- 1/4 c. low-fat cottage cheese
- 1 teaspoon minced fresh chives
- White pepper
Method
- Preheat oven to 325 degrees.
- Cut potatoes in half and carefully scoop out the pulp.
- Reserve 2 of the skins.
- Whip cottage cheese till smooth in a blender or possibly food processor.
- Combine potato pulp, cottage cheese, chives, and pepper and blend well.
- Stuff into potato skins.
- Bake till heated through, about 20 min.
