Ingredients
- 1 lb. ground beef
- 3/4 c. uncooked rice
- 1 tsp. baking powder
- 1 Tbsp. minced parsley
- 1 diced onion
- 3/4 Tbsp. salt
- pepper (if desired)
- 1 can tomato soup
Method
- Mix together beef, rice, baking powder, onion, salt and parsley.
- Mold into firm balls, about 1 1/4-inches in diameter. Brown in 3 tablespoons fat, turning frequently.
- After browning meat balls, pour tomato soup over them.
- Cook in covered skillet, over low heat, until rice is tender and stands out on meat.
- This quantity makes 7 meat balls.
