Ingredients

  • 1 lb. ground beef
  • 3/4 c. uncooked rice
  • 1 tsp. baking powder
  • 1 Tbsp. minced parsley
  • 1 diced onion
  • 3/4 Tbsp. salt
  • pepper (if desired)
  • 1 can tomato soup

Method

  • Mix together beef, rice, baking powder, onion, salt and parsley.
  • Mold into firm balls, about 1 1/4-inches in diameter. Brown in 3 tablespoons fat, turning frequently.
  • After browning meat balls, pour tomato soup over them.
  • Cook in covered skillet, over low heat, until rice is tender and stands out on meat.
  • This quantity makes 7 meat balls.
