- 1 to 1 1/2 lb. ground chuck
- 1 small can stewed tomatoes
- 1 can cream of mushroom soup
- 1 onion, chopped
- 1 small green pepper, chopped
- 2 or 3 Tbsp. catsup
- 1 to 2 tsp. chili powder
- 2 to 3 c. cooked rice
- 1 c. grated Cheddar cheese
Method
- Saute beef, onion and green pepper until meat is done.
- Add mushroom soup and stewed tomatoes and cook on low heat until onion and green pepper is done.
- Add cooked long grain rice and blend well.
- Pour into casserole dish, then garnish top with grated cheese.
- Place in a 400° oven until cheese melts.
- Also good warmed over.
- Add the catsup and chili powder when adding the soup and stewed tomatoes.
