Ingredients

  • 1 to 1 1/2 lb. ground chuck
  • 1 small can stewed tomatoes
  • 1 can cream of mushroom soup
  • 1 onion, chopped
  • 1 small green pepper, chopped
  • 2 or 3 Tbsp. catsup
  • 1 to 2 tsp. chili powder
  • 2 to 3 c. cooked rice
  • 1 c. grated Cheddar cheese

Method

  • Saute beef, onion and green pepper until meat is done.
  • Add mushroom soup and stewed tomatoes and cook on low heat until onion and green pepper is done.
  • Add cooked long grain rice and blend well.
  • Pour into casserole dish, then garnish top with grated cheese.
  • Place in a 400° oven until cheese melts.
  • Also good warmed over.
  • Add the catsup and chili powder when adding the soup and stewed tomatoes.
