Ingredients
- 2 cups all purpose flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1 tbsp sugar
- 3/4 tsp salt
- 1/2 cup (1 stick) cold unsalted butter
- 1 cup buttermilk
- 1/2 - 3/4 cup shredded cheddar (optional)
Method
- 1. In a food processor, combine all the dry ingredients and pulse a few times to mix.
- 2. Cut the butter into small pieces and add it to the food processor. Pulse several times to cut it in until coarse crumbs appear.
- 3. Turn the mixture out into a large bowl. Add the shredded cheese at this point if you want it.
- 4. Add buttermilk and gently mix until combined.
- 5. Turn the dough out onto a floured surface and gently knead it to bring it together.
- 6. Roll out the dough to a 1 inch thickness and fold it a couple of times. Repeat this rolling and folding process 2 or 3 more times.
- 7. Roll out the dough into a 2 inch thickness. Cut with a round cutter or just with a knife.
- 8. Place the pieces on an ungreased cookie sheet. Bake at 400 deg F for 15 minutes.
