Ingredients

  • 1 c. pineapple juice, drained from 1 large can of crushed pineapple
  • 1 (3 oz.) pkg. lime flavored gelatin
  • 1 pt. vanilla ice cream, cut into pieces

Method

  • Heat pineapple juice to boiling in a 2-quart saucepan.
  • Remove from heat.
  • Add gelatin.
  • Stir until dissolved.
  • Add vanilla ice cream to hot liquid.
  • Stir immediately until melted.
  • Chill, until mixture is thickened, but not set, 20 to 25 minutes.
  • Fold in drained pineapple.
  • Turn into cooled, baked 9-inch pie shell. Chill until firm, at least 2 hours.
