Ingredients
- 1 c. pineapple juice, drained from 1 large can of crushed pineapple
- 1 (3 oz.) pkg. lime flavored gelatin
- 1 pt. vanilla ice cream, cut into pieces
Method
- Heat pineapple juice to boiling in a 2-quart saucepan.
- Remove from heat.
- Add gelatin.
- Stir until dissolved.
- Add vanilla ice cream to hot liquid.
- Stir immediately until melted.
- Chill, until mixture is thickened, but not set, 20 to 25 minutes.
- Fold in drained pineapple.
- Turn into cooled, baked 9-inch pie shell. Chill until firm, at least 2 hours.
