Ingredients
- 2 tbsp olive oil
- 1 None large shallot, chopped
- 8 oz orzo
- 2 cups chicken stock
- 1 None lime, zested and juiced
- 1/2 cup dried cranberries
- 1 tbsp chopped fresh parsley leaves
- 1 tsp chopped fresh thyme leaves
- 1/2 cup sliced almonds
Method
- In a small saucepan, heat oil over medium heat. Cook shallot until softened. Add orzo, chicken stock and 1/2 cup water. Bring to a boil then reduce heat, cover and cook for 10 mins, or until liquid is absorbed.
- Transfer to a serving bowl and toss with 1 tsp lime zest, 2 tsp lime juice, cranberries and herbs. Season. Fold in almonds before serving.
