Ingredients

  • 1 pound Chicken Breast Cooked And Chopped
  • 4 cups Cooked Brown Rice
  • 2- 1/2 cups Broccoli, Steamed And Chopped
  • 8 ounces, weight Light Cream Cheese
  • 1/2 cups Nonfat Plain Greek Yogurt
  • 1/2 cups Low Sodium Chicken Broth
  • 1- 1/2 cup Nonfat Milk
  • 1- 1/2 cup Light Cheddar Cheese, Divided
  • 2 dashes Garlic Salt
  • 2 dashes Onion Powder
  • 1 dash Nutmeg
  • 2 dashes Salt
  • 2 dashes Pepper
  • 1 whole Sleeve (about 4 Oz. Size) Golden Round Crackers, Smashed (such As Ritz)

Method

  • Preheat oven to 375 degrees F and spray an 8x8 baking dish with nonstick cooking spray.
  • In a large bowl, combine cooked chicken, cooked rice, and steamed broccoli.
  • Set aside.
  • In a large skillet, heat cream cheese, yogurt, chicken broth, and milk.
  • Add 1 cup of cheese and stir to let it melt.
  • Add spices and adjust to taste.
  • Once sauce is smooth and hot, add to chicken mixture and stir until combined.
  • Pour mixture into baking dish and top with remaining 1/2 cup cheese and smashed crackers.
  • Bake 20 minutes or until sauce is bubbly.
  • Let sit 5-10 minutes then serve.
