- 1 pound Chicken Breast Cooked And Chopped
- 4 cups Cooked Brown Rice
- 2- 1/2 cups Broccoli, Steamed And Chopped
- 8 ounces, weight Light Cream Cheese
- 1/2 cups Nonfat Plain Greek Yogurt
- 1/2 cups Low Sodium Chicken Broth
- 1- 1/2 cup Nonfat Milk
- 1- 1/2 cup Light Cheddar Cheese, Divided
- 2 dashes Garlic Salt
- 2 dashes Onion Powder
- 1 dash Nutmeg
- 2 dashes Salt
- 2 dashes Pepper
- 1 whole Sleeve (about 4 Oz. Size) Golden Round Crackers, Smashed (such As Ritz)
Method
- Preheat oven to 375 degrees F and spray an 8x8 baking dish with nonstick cooking spray.
- In a large bowl, combine cooked chicken, cooked rice, and steamed broccoli.
- Set aside.
- In a large skillet, heat cream cheese, yogurt, chicken broth, and milk.
- Add 1 cup of cheese and stir to let it melt.
- Add spices and adjust to taste.
- Once sauce is smooth and hot, add to chicken mixture and stir until combined.
- Pour mixture into baking dish and top with remaining 1/2 cup cheese and smashed crackers.
- Bake 20 minutes or until sauce is bubbly.
- Let sit 5-10 minutes then serve.
