Ingredients
- 1/2 c. lime juice
- 1 onion, quartered
- 1/2 tsp. dried basil leaves
- 4 chicken breast halves, skinned
- 1 clove garlic, crushed
- lettuce leaves
- lime slices for garnish
Method
- Combine lime juice, garlic, onion and basil in a small dish. Pour over chicken breasts.
- Cover and marinate 30 to 60 minutes. Turn chicken over once.
- Place chicken on rack in broiler pan (reserve marinade).
- Broil 5 to 6 inches from heat source for 15 minutes.
- Baste twice with marinade.
- Turn chicken and repeat. Chicken is done when it is brown and juices run clear when meat is pierced.
- Can use grill in place of oven.
- Contains 142 calories per serving, 3 grams of fat and 73 mg. cholesterol.
