Ingredients

  • 1/2 c. lime juice
  • 1 onion, quartered
  • 1/2 tsp. dried basil leaves
  • 4 chicken breast halves, skinned
  • 1 clove garlic, crushed
  • lettuce leaves
  • lime slices for garnish

Method

  • Combine lime juice, garlic, onion and basil in a small dish. Pour over chicken breasts.
  • Cover and marinate 30 to 60 minutes. Turn chicken over once.
  • Place chicken on rack in broiler pan (reserve marinade).
  • Broil 5 to 6 inches from heat source for 15 minutes.
  • Baste twice with marinade.
  • Turn chicken and repeat. Chicken is done when it is brown and juices run clear when meat is pierced.
  • Can use grill in place of oven.
  • Contains 142 calories per serving, 3 grams of fat and 73 mg. cholesterol.
