Ingredients

  • 4 strips bacon, diced
  • 4 c. leaf lettuce
  • 1 large tomato, diced
  • 1/4 c. green onion, sliced
  • 1/2 tsp. salt
  • 1/2 tsp. oregano
  • 1/4 tsp. pepper
  • 2 Tbsp. vinegar

Method

  • Fry bacon until crisp.
  • Drain, reserving 1 tablespoon of fat. Tear lettuce into bowl.
  • Add tomato and onion.
  • Sprinkle greens with seasonings.
  • Combine 1 tablespoon of bacon fat and vinegar. Bring to boil.
  • Pour over salad, tossing lightly to mix.
  • Crumble bacon over top of salad.
  • Serve immediately.
  • Serves 6.
