- 7 c. water
- 8 chicken bouillon cubes
- 1 c. lentils
- 1 c. brown or wild rice
- 1 c. chopped onion
- 2 15 oz. cans diced tomatoes
- 1 c. chopped carrot
- 1 c. chopped celery
- 1 tsp. basil
- 1 tsp. oregano
- 1 1/2 tsp. cumin
- 1/2 tsp. curry
- 5 garlic cloves
- 1/4 c. cider vinegar
- Salt and pepper
Method
- Place all ingredients except vinegar, salt and pepper
- in soup pot and simmer covered for 45 minutes, stirring occasionally. Add the cider vinegar; season with salt and pepper.
- Thin with water or chicken broth as desired.
