Ingredients

  • 1/2 cup KRAFT Italian Vinaigrette Dressing made with Extra Virgin Olive Oil, divided
  • 2 Tbsp. fresh lemon juice Safeway 4 ct For $5.00 thru 02/09
  • 1 small yellow pepper, cut into strips
  • 1 cup sliced fresh mushrooms
  • 1 small red onion, thinly sliced
  • 1 lb. fresh asparagus spears, trimmed
  • 1/4 cup KRAFT Shredded Parmesan Cheese

Method

  • Mix dressing and lemon juice.
  • Heat 1/4 cup dressing mixture in large nonstick skillet on medium-high heat.
  • Stir in peppers, mushrooms and onions; cook 3 to 5 min.
  • or until crisp-tender, stirring occasionally.
  • Add asparagus and remaining dressing mixture; stir.
  • Cover; simmer on medium-low heat 5 to 7 min.
  • or until asparagus is crisp-tender.
  • Serve topped with cheese.
